3 Easy Snacks to Make at Home
Making snacks ahead of time is the perfect life hack for helping you save money and eat a little healthier.
Here's three quick and easy snack recipes from Sunshine Coast local, Taylor Everingham - the @15minchef. You can whip these up at home and keep in the fridge for when those hunger pains hit. These are delicious for the whole family, great to take to the office or even send to school with the kids and they are nut free! Zucchini Slice:
Ingredients:
- 8 large eggs
- 1 large zucchini
- 1 large carrot
- 1/2 cup corn kernels
- 1/2 white onion
- 200g bacon
- 1 cup cheddar cheese
- 1 cup self raising flour
- 1/3 cup olive oil
- 1 tsp salt, 1 tsp pepper
Method:
1. Preheat the oven to 180 degrees.
2. Finely dice your onion and bacon.
3. In a fry pan cook the bacon for 1 minute and then add the onion into the same pan and cook for a further 5 minutes.
4. In a large bowl crack and whisk your 8 eggs and then add in the cooked onion and bacon.
5. Finely grate your zucchini and carrot and add it to the bowl.
6. Now add in the cheese, olive oil, corn, flour, salt and pepper and give it a good mix.
7. Line a baking tray with baking paper and pour the mixture in.
8. Bake for 35 minutes at 180 degrees.
9. Remove from the oven and slice into 8-10 serves.
10. The perfect lunch box or work snack! and even freezes well if you want to make a double batch!
Apricot & Coconut Bliss Balls:
Ingredients:
- 1 1/2 cup of oats or (oat flour)
- 1 cup (250g) dried apricots
- 1/2 cup desiccated coconut
- 1 tbsp chia seeds
- 1 tbsp vanilla essence
- 2 tbsp milk of your choice
Method:
1. Blend 1 and 1/2 cups of oats in a food processor or nutri bullet.
2. Blend the apricots in the food processor next.
3. In a large bowl add the oat flour, apricots, chia seeds, vanilla essence and milk.
4. Mix well.
5. Place the desiccated coconut into a small separate bowl.
6. Roll the mixture into 16-18 balls and then roll each one in the coconut to coat the outside.
7. Place into the fridge for an hour.
8. These are a great snack to make ahead and freeze as well!
Banana & Blueberry Muffins
Ingredients:
- 2 large ripe bananas
- 1 punnet of blueberries
- 2 eggs
- 2 cups of oat flour or 11/2 cups almond flour
- 1 tbsp baking powder
- 1/3 cup coconut sugar
- 2 tbsp coconut oil
- 1/4 tsp salt
Method:
1. Preheat the oven to 180 degrees.
2. Line a muffin tray with muffin cases or grease them with butter.
3. In a large bowl mash 2 bananas, 2 eggs, 1 punnet of blueberries, 2 tbsp of melted coconut oil and mix well.
4. In a separate bowl combine the dry ingredients of oat flour, baking powder, coconut sugar and salt.
5. Then mix the dry ingredients into the wet.
6. Divide the mix evenly between the muffin tin.
7. Sprinkle some extra coconut sugar on top.
8. Bake in the oven at 180 degrees for approximately 20 minutes or until golden.
9. Allow the muffins to cool and then enjoy!
